LC Lime Muffins with Coconut Cream Cheese Icing

i don't have a pic of this one, for some reason i just don't have a nack for food pix.
these are AWESOME and i have a new, better recipe: 1/2 the carbs of the old one and WAY better.

1/4cup soy flour
1/4 flax seed meal
2 eggs
1 cup heavy cream
1tbl spoon baking pwdr
1 pkg lime jello (sugar free)
1tbl spoon vanilla

mix and bake like so

Cream Cheese Frosting
1 8oz pkg. cream cheese 1/3 less fat
1/4 cup splenda
1 1/2 tbl spoons coconut flavoring.

blend. spread. enjoy.

my little weekend project is almost complete :)

WIP again.....

no, finding a project didn't kill me.....i am still here..... i actually finished the top of a project, but it didn't turn out the way i wanted it, so it doesn't count....she's heading to the scrap bin. all i have to say is EQ6 is very overwhelming!! i have so many project ideas, and so little time and money. lol. so, i started a <~~~new project.... i finished the top part today.... i would totally show you, but it is a surprise! not that it matters, i only have one follower at this point, so i am basically just entertaining myself...... what a blast! i have been on a fabric binge for the last week....OK lets just call it what is really is here....THE LAST 2 MONTHS. lol. my new toys include Fig & Plum Jelly Roll, accompanied by Mill House Inn Jelly Roll, and of corse, what ever is on sale at JoAnnes. you can find me there every day at lunch time using a coupon. mmmm.....coupon. speaking of which, i should go get my game plan ready for next weeks purchases :)

time keeps on slipping...

i am having a little bit of quilters block......
i have tons of new fabric, but i still don't have enough to complete one project.....
not to mention that pesky full time job getting in the way of living....

i WILL have something new on the way this week, if it kills me.

Meat Lasagna & Garlic Cheese Muffins....Carb Friendly of course


ok,ok, i know it looks like slop, but it is soooo good.  that is usually the case with low carb things, the messier and uglier it is, the better it tastes. and i am SUPER EXCITED about these muffins!!!!! seeing as how we can't have bread this is the next best thing and they taste like real ones :) lol.

MEAT LASAGNA:
2lb hamburger
1/2 chopped white onion
15 oz. Hunts Garlic & Herb Tomatoe sauce
1 tsp. minced garlic
1tsp garlic pwdr
1/2 tsp salt
1/2 tsp black pepper
2tbls olive oil

CHEESE FILLING:
15oz ricotta cheese
16oz mozzarella cheese shredded (i use the italian cheese pre shredded)
1/2 cup parm. cheese
1 lg. egg
1/2tsp minced garlic
2tsp dried italian seasoning
1tsp garlic pwdr

preheat oven to 350
heat oil in skillet and cook onions until tender, add beef and brown. drain off fat. add tomato sauce, garlic, garlic powder, salt and pepper and simmer for 2 more minutes stirring constantly.
mix the cheese filling ingredients in separate bowl using 1/2 of the mozzarella cheese.
fill bottom of baking dish with meat and top with cheese filling, then top off with the remainder of the mozzarella cheese.
bake for 45-50 min. let cool for 10min before serving.

about 3 grams of carbs per serving

GARLIC CHEESE MUFFINS:
1 cup soy flour (16 carbs)
1tsp baking pwdr
2 large eggs (1 carb)
1 cup heavy cream
1/2 stick butter
1/2 cup parm cheese.
3/4 cup shredded cheddar cheese
1/2 tbl spoon onion powder
1/2 tblspoon garlic powder
few shakes of salt

preheat oven to 350
mix all together
put in greased muffin pan
bake until a little brown on the peaks

mmmmmmm, mmmmmmm good. goes great with any italian meal :)

Orange Spice Muffins

welp, i am on atkins, AGAIN! i have been on and off since Feb. 08. I lost a total of 20lbs, and like every good american, i have put on some holiday pounds. so, time to get serious. i was 155 at the start, and got down to 135 and even when i am off i usually only get up to 140-145, so i am aiming to be on it all year, and going off on the weekends (only after the first 3 months), my goal is 130, so here we go again...
i am always trying to make recipes that are low carb, ot tweek them anyhow.
these muffins are DELISH and super low carb, great texture and deffinately satisfying to a sweet attack.

LOW CARB MUFFIN RECIPE:
1 cup soy flower (or atkins bake mix) (about 16 carbs total)
1tsp baking powder (0carb)
1/2 stick of butter (0carb)
1/2 cup of heavy cream (0carb)
immatation vanilla to taste (0carb)
2 eggs (1carb total)
1 pkg of sugar free orange jello (0carb)
a few sakes of cloves and ginger (0carbs)

Preheat oven 375 - mix all ingredients - put in average muffin pan - bake until done (i never pay attention, i just know when to check :) ) yields about 8 muffins

*and  tada! yummy muffins!* these are also great with low carb cream cheese frosting.

you can substitute the orange jello for any kind of flavor jello, just leave out the spices :) the blue berry is also great, and strawberry, and dark cherry, and strawberry kiwi, and.......

finally

dude, it is complete! washed and scruffled and everything. and i just L-O-V-E this little guy. big ups to Rachael for an awesome pattern and super big ups to moda for making it a kit (saves $ if it is a kit, lol) of course you don't need a kit to make it, but it is a hell of a lot easier. and i love easy! the backing is a super soft throw i got at the dollar store ( i loved the swirly pattern of the fibers, it is almost rose looking, a perfect match to the mill house inn fabric)-WAY cheaper than buying the same material by the yard- i had to add a border to the back to make it big enough for the top, but it all worked out. and even tho it is riddled with screw ups, it turned out perfect for me. now on to more things! i designed a quilt today...i call it the Fig-a-Rose....it is a dutch rose repeating block all made from different lines of the Fig Tree fabric co......i will have to do some shoping around for deals, but i hope to make this one for the Moda Bake Shop this year (one of my resolutions.....one of many. lol) speaking of which, yall got any reolutions? i made my list and i am totally going to keep them, well, i am really going to try this time, anyhow.
